The ‘P’ in this case was Nigella Lawson’s Pea and Garlic Crostini and the ‘S’ was Stefano Inama’s Sauvignon Vulcaia. There’s no doubt the domestic Goddess was on fine form with this arresting, vivid green, aromatic and curiously savoury variation on the usual porcini and arborio theme. We served it on toast at our Easter tasting at The Old Bank Hotel a couple of weeks ago and paired it with Stef’s highly textured Sauvignon. Grown on the basalt soil of the Soave Classico district it the wines’ acidity and mouthfeel framed the creaminess and made light of the pea purée’s richness. An unusual marriage but one that worked surprisingly well.
